WHere is a simplified take on a beverage featured on the seasonal drinks list. Designed as a batch pre-mixed which is bursting full of essence of a holiday season, which makes it excellent for your festive gathering. Reserve the remaining citrus syrup you can use for breakfast cocktails, sweets, or to make more rounds of the drink.
The Bikini Cocktail
Serves 10 people
For the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Cocktail (makes 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Method
For the Citrus Syrup: Combine the listed ingredients into a pot, bring to a light boil, agitating so the sugar melts. Then, take off the stove allowing it to reach room temperature fully. Pour to a sterilised bottle, cap it and store chilled, where it will keep for about a month.
For the Cocktail Base: Combine every spirits and syrup into one sizeable container, leave to sit for one hour, then filter it best through a fine cloth, so it's perfectly clear.
For serving: Measure 85ml of the batch mix to a stirring glass packed with ice, gently stirring carefully for about 60 seconds to chill. Filter into an frosted cocktail glass or similar, decorate with some cranberries and complete it with a light spray of the essential oil above the glass.
